That July heat wave made my freezer jam set in 20 minutes flat

I was canning peach jam in Phoenix when the kitchen hit 100 degrees, so I put the jars on a cold marble slab near the AC vent before they went in the water bath. The pectin set perfectly in no time. Has anyone else played with cooling surfaces to speed up jelly setting?
