Hydraulic vs mechanical disc brakes, I switched shops and now I'm second guessing everything

I've bled Shimano and SRAM brakes for a decade, but I took a job at a shop that only stocks cable actuated calipers and I had to do a full frame up build with them last Tuesday. They stopped fine on the stand but on a test ride down a 6% grade near the river I grabbed a handful and got way more lever travel than I expected, almost went wide on a bad corner. Is there a trick to setting up mechanical discs without the flex, or do I just accept that feel and plan for it on every customer bike?
