Had to pick between kosher cuts and halal specs for my shop's special order
A customer came in last Tuesday wanting 40 lamb racks for a wedding, but their event mixed both kosher and halal guests. I went with halal specs since the slaughterhouse I use is certified that way, and honestly it worked out fine, just needed to skip the usual red wine marinade suggestion. Anyone here handle dual-cert requests, or do you turn them away to keep things simple?
Works out fine until someone at that wedding actually keeps kosher or halal and notices the mix. Hmm, here's the thing though. Kosher and halal rules aren't the same, and a halal cert doesn't cover kosher. No pork, no mixing meat and dairy, that part overlaps. But kosher needs the animal killed a certain way by a certain person, and the hind quarter usually gets removed. Halal doesn't work that way at all. So calling 40 racks "fine" for a mixed guest list is kinda wishful. Most people at a wedding won't ask, sure. But the ones who do keep strict, they'll know from one bite or one question. You got lucky, that's not the same as handling dual-cert.
