Why I quit buying whole strip loins from my old supplier in Reno
Three months back I noticed the last four loins from my guy in Reno had way too much gristle running through the short loin, and I was losing almost a pound of usable meat on every single one after trimming. When I called him on it, he told me that was just how the breed runs now, but I've been cutting for 22 years and I know a lazy trim job when I see one. I switched to a smaller outfit out of Fallon and my yield went up 12% overnight, so tell me I was wrong to walk. Any of you ever drop a long time supplier over something like this, or did I just burn a bridge for nothing?
