Fumbled a wedding tasting when I ran out of remoulade

I was doing a tasting for a 120-guest wedding near Charleston and the sauce I prepped with my station got bumped off the cart. Had to remake it in 20 minutes with a different recipe on the fly, got lucky the couple liked it better.
