Overheard a guy at the Fry Fest in Dallas say 'oil temp is everything'

He was talking about how he ruined 30 pounds of chicken wings because his oil was 50 degrees too low, and I realized that's exactly why my last batch of onion rings came out like greasy sponges. Has anyone else had a batch of food ruined just because the oil wasn't hot enough?

@tara_jones94 sounds like you and I need to start a support group for soggy food survivors. I once dropped a whole batch of hushpuppies into oil that was barely warm, and they came out looking like wet dough balls that had given up on life. That smell you mentioned? Still haunts my kitchen dreams.
