Okay, I was totally wrong about using floral foam for large installations.
For a hotel lobby job in April, I built a huge arch with two full bricks of foam. It looked great day one, but by day three, the flowers were wilting because the foam dried out overnight. Last week, I tried a chicken wire and water tube system for a similar arch. The flowers stayed fresh for the full five-day event, and breakdown was way faster. The client even commented on how much better everything looked on the final day. Has anyone else switched methods for long-term installations and seen a big difference in longevity?

My florist friend said she won't even TOUCH floral foam for anything lasting more than a day now. The chicken wire method is just way more reliable.
