Funny enough, a guided taco tour in my city's old market district completely shifted my perspective. In my experience, it highlighted family-run stands that had been operating for decades, like this one Oaxacan place using recipes passed down three generations. Now I make a point to explore those side alleys I used to skip, and it's added a whole new layer to how I understand the local culture. Your mileage may vary, but for me, it was about trusting the guide to point out the stories behind the stalls.
