Pro tip: let your boxed cake mix sit overnight, I almost didn't believe it
My sister swore that letting boxed cake batter rest in the fridge overnight made it taste homemade, and I laughed at her for months. Last Saturday I finally tried it with a plain yellow mix since I had nothing to lose, and the cake came out so much softer that my husband asked if I bought it from the bakery on Elm. I'm not saying it turns into a French pastry or anything, but the crumb was way less spongy and nobody at the potluck guessed it came from a $2 box. Has anyone else tried resting batter like this, or is it just me finally noticing after 15 years of baking?
