I wanted to smoke a pork butt just like the pitmasters do. I spent hours watching their videos to learn the steps. I got my smoker ready early in the morning for a long cook. But I didn't keep an eye on the temperature like I should have. After a while, the meat was way too dry and almost black. We tried to eat it, but it was too tough, so we got pizza instead. Now I laugh about it and know to watch the heat more closely.
Kinda disagree, honestly. I see people at my job make the same mistakes over and over. Sometimes a mess up is just a mess up, doesn't mean a lesson gets learned.
