Update: I was set on stickburners only, then a guy at the Memphis in May tent changed my mind
I always figured real BBQ had to come off a big offset stickburner, no shortcuts, and I said that for years. Two weeks ago I went to Memphis in May and stood around a smaller team's tent while they pulled their ribs off a plain drum smoker. The pitmaster, a guy named Ray, told me he runs 275 degrees for about 4 hours and burns nothing but Kingsford blue bag with a couple cherry chunks. His ribs had a cleaner bark and better bite than the $90k trailer rig two spots down, and I ate at both. I went home and fired up a borrowed 22 inch drum on Saturday just to test it, and I'm not kidding, it held 275 for 5 hours without me touching anything. Now I'm wondering if I've been making this harder on myself for 11 years for no reason. Anyone else switch to a simple drum after running offsets, or did I just get lucky with one cook?
