That bookbinder in Portland who presses every section before sewing

I overheard a guy at a workshop in Portland say he spends 20 minutes pressing each section flat before he even thinks about sewing, and after trying it on a 300 page journal last weekend, I honestly wonder why I ever skipped that step, does anyone else do the pressing thing or am I just late to the obvious?
