Went with the Coptic stitch over a simple case binding for my first journal and now I'm second guessing it

I finished my first handmade journal on Saturday and had to pick between a Coptic stitch and a basic case binding. I went with Coptic because I wanted the book to lay flat, but now the spine looks uneven and one of the signatures is sitting loose. Did I mess up the tension or should I have just started with a case binding like the woman at the Nashville bindery meetup told me to?
