Shoutout to the line cook at that diner in Philly who taught me more than culinary school ever did
I was stuck on a station at this greasy spoon in South Philly last winter, struggling with my sauce consistency. This old guy named Rico just walked over, grabbed my pan, and showed me in 30 seconds how to fix it by adjusting the heat and fat ratio. No fancy words, just real moves. Has anyone else learned more from a random seasoned cook on the line than from any textbook or class?

Totally changed my thinking on this. Book smarts are cool but nothing beats watching a pro who actually does it every day.

Honestly, that's like saying watching someone assemble IKEA furniture is better than reading the manual. Until they realize 20 minutes in that they've been building the bookcase upside down. Real world skills are great, but sometimes the book smarts save you from looking like a right fool.
