The line cook at a diner in Tulsa showed me how he keeps his station clean during a rush
I was grabbing breakfast at a little diner in Tulsa last month and the place got slammed all at once, like 20 tickets on the rail in 5 minutes. The line cook never panicked, he just wiped his board down between every single pickup and kept a squeeze bottle of oil nearby instead of the big jug. I asked him about it after and he said his old chef yelled at him once for a messy station mid-service and he never forgot it. Been doing the same squeeze bottle trick at my spot for 3 weeks now and my tickets are way cleaner. Anyone else got a small habit like that they picked up from watching someone else work?
