Walk-in died at 6:45 on a Friday, lost the whole seafood order

Compressor crapped out right before dinner service at the spot I run on 5th, 40 pounds of halibut and scallops gone. I ran to Restaurant Depot, grabbed ice and two cheap coolers, and we pushed a limited menu instead of closing for the night. Anyone got a standby plan for walk-in failures that doesn't cost a fortune?
