Appreciation post: the guy at the auto shop on Route 9 swore peanut oil was a waste, and he was dead wrong
Back in March I was about to fry a batch of wings for a poker night and my buddy Dave, who used to run a diner in Poughkeepsie, told me to skip the peanut oil and just use the cheap stuff because 'it all tastes the same once it hits 350.' I listened to him, the oil broke down after two rounds, and my kitchen smelled like burnt popcorn for 4 days. Now I'm wondering if I should've gone with peanut oil at $12 a jug or if the real problem was me not watching the temp. What do you all use for wings that won't turn my place into a grease pit?
Growing up my mom always used the cheapest veg oil for everything so I figured frying oil was frying oil, no point paying extra. Then my roommate fried wings in peanut oil last year and the difference in crunch and taste was honestly not even close. Dave gave you bad advice, but yeah you also gotta watch that temp or any oil turns on you.
