Honestly, fermenting cabbage felt like a waste of time for me
I kept getting weird smells and mushy texture, which made me want to stop. Then I read about using a specific salt ratio and a cooler spot in my house. Tbh, I tried it with a kitchen scale and moved the jar to the pantry. Now my sauerkraut comes out crisp and tasty every single time.

Chlorine in tap water can kill the good bugs... switching to filtered water fixed my funky smells too.
