The old man at the gas station corrected me on green chile

I grew up here but always ordered my chile with a spoonful of sour cream on top, thought that was just how it went. Last Tuesday this retired rancher watched me do it at the pump and goes 'son, you are covering up the flavor, not adding to it', so I tried a clean bowl at Sadie's that night. Am I the only one who spent years ruining their own chile without knowing?
