Corn ribs changed my side dish game, no more soggy wedges

I used to make potato wedges in the oven every Sunday, 45 minutes at 400 degrees with oil everywhere. Last month I tried cutting corn cobs into ribs, season them with chili and lime, and air fry at 380 for 15 minutes. The edges get crispy and charred while the kernels stay juicy, like street corn without the grill. My wife said she'd eat these over fries any night, which shocked me since she's a fry purist. I've done them three times now and they come out consistent every single try. Anyone else cut corn into planks instead of leaving it whole? I'm curious if flipping halfway matters or if you just shake the basket.

The "street corn without the grill" line is exactly what got me, because I tried that same thing last summer and realized the real trick is skipping the lime in the seasoning mix until after they cook. Lime juice in the air fryer just steams off and makes them soggy, which is the whole problem you're trying to avoid. I brush them with a little melted butter and chili powder first, then hit them with fresh lime and salt as soon as they come out, and the char stays way sharper. Also, I never flip them, I just shake the basket hard at the 8 minute mark, that gets every side crispy enough without losing the juicy middle. Your wife is right though, these beat fries, especially when you dip them in that leftover crema from the fridge.
