Hot take: My barista friend convinced me that drip coffee beats pour-over every time

We were closing up her shop last night and she walked me through the whole process. She said pour-over is mostly for show and drip machines get better temperature control. She pulled out a refractometer to prove her point, the numbers were wild. Now I'm sitting here wondering if I've been overcomplicating my morning routine for 3 years. Anyone else get their coffee opinions flipped by someone who actually works with it?

Wait, are you telling me I could have saved myself three years of fussing with gooseneck kettles and spiral pouring patterns? Because my brother (he runs a coffee truck) basically told me the exact same thing last month. He said drip machines are just way more consistent, especially with water temp staying steady instead of dropping every time you pour. I felt so dumb standing in his truck watching him batch brew like 20 cups in the time it takes me to do one pour-over. And honestly, the coffee tasted just as good. Now I'm looking at my Chemex like it's a fancy paperweight.

Wait, your brother is running a whole coffee truck off a drip machine? That actually blew my mind a little. I always assumed the big batch brewers they use at shops were some kind of industrial magic, not just a really good Mr. Coffee on steroids. Three years of gooseneck fussing would make me want to throw the whole Chemex in the trash too. Did he show you what kind of drip machine he uses? I'm genuinely curious if it's a standard Bunn or something more expensive.

Fancy paperweight" made me laugh but I gotta disagree a little. Pour-over lets you taste way more of the subtle notes in the beans compared to a drip machine, even a good one.
