I finally switched to a scale for measuring flour and it changed my bread
After 12 years of using measuring cups, I tried weighing flour for my sourdough last month. The difference was huge, my loaves come out the same every single time now. Cups just pack too differently depending on humidity and how you scoop. Has anyone else made this switch and noticed their crumb texture improve?

Grabbing a scale was the best thing I ever did for my baking, but it took me a while to trust it completely. Once you start, you realize cups were never really measuring anything, just guessing with extra steps. The crumb change is real, but the bigger win for me was consistency in my starter feedings too, same weight every time means no more mystery hydration. Next thing you know you'll be weighing your water and salt too, and then you'll wonder why you fought it for so long. It's a slippery slope, but a good one.
