My buttercream split right before a wedding cake delivery in Phoenix

I was in a 90-degree kitchen and added the butter too cold, so the whole batch curdled. I saved it by slowly warming the bowl over a steam bath and re-whipping, but has anyone else fixed a disaster that fast?

Was your heart pounding like a drum solo? That steam bath trick is genius, honestly makes @simonh74's hairdryer method look almost sane. We bakers really become kitchen MacGyvers when the frosting hits the fan.

That's some impressive kitchen triage. We've all had those last-minute buttercream meltdowns. My best save involved using a hairdryer on a bowl, which felt ridiculous but worked.
