My switch from sifting flour saved me time and effort

I followed the advice for years. Now I see it's not needed for home baking.

Seriously? I tried skipping the sift exactly once and my batter was full of little flour lumps. My chocolate chip cookies came out dense and weird. Maybe it works for some recipes, but for anything that needs light mixing, I'm keeping that sifter handy. The extra two minutes makes a real difference in how things turn out.

What convinced you to stop sifting? I was a total sifting believer until I tried a no-sift banana bread recipe last month. The texture was actually lighter than my usual version, and I haven't looked back since.
