Hot take: A judge in Memphis told me my ribs were 'too tender'...

He said they had no bite left, so now I test for a slight tug instead of just fall-off-the-bone. Anyone else get that note and adjust their method?

Harsh but fair, I guess a judge's taste buds are the final boss. @faith274 has the right idea, you don't want your meat turning into baby food. My uncle would call fall-off-the-bone ribs a "textural failure" and honestly he's not wrong. It's a fine line between perfectly tender and just a pile of sad mush.

Totally get that. Had a buddy say the same thing about my pulled pork once, that it was more like a spread. Now I aim for that little bit of chew too.
