Vent: My $12 grocery store roast chicken saved dinner 4 nights last week
I bought one of those cheap rotisserie chickens at the Walmart in Peoria on Tuesday for like $3.50 less than the deli one. Ate the legs with rice that night, shredded the breast for tacos Wednesday, made soup with the carcass Thursday, and Friday I tossed the last bits into a box of mac and cheese. It fed me and my roommate for under $10 total. How do you all stretch a single chicken to the max? I need new ideas since I'm getting bored of my usual rotation.

Rotisserie chickens are a great deal but you're not really saving money if you're buying them at $12, that's the regular price most places now. The real trick is grabbing them late in the evening when the deli marks them down to clear the case, I've snagged them for $4-5 around closing time. Save the leftover bones in the freezer and you can make a second round of stock whenever you collect a couple more.

Ever tried turning the carcass into a pot pie the next week? I do that with any bones I save up, just boil them down with some celery and carrots, then thicken the broth with a little flour and throw in whatever veggies are about to go bad. Covers two more meals easy, and it tastes totally different from soup. Also, don't sleep on frying the skin separately until it's crispy, that's a snack my roommate and I fight over. After that, I'm usually done with the bird, but the stock gets used for rice or ramen for days after.
