Saw a guy at the farmers market deboning a whole pig in 12 minutes flat.

Watched him work a boning knife like it was part of his hand. Changed how I hold my blade now. Anyone else pick up tricks from watching old timers?

Boning knife work is all wrist, not elbow. Did you notice if he was using a hula motion where the tip barely leaves the meat? That's the trick that saves the most time. I watched a butcher in Chinatown do the same thing with a lamb shoulder once, made me realize I was sawing instead of slicing.

Yeah 12 minutes is totally doable if you know the hula motion thomasshah mentioned. Once you get that wrist snap down, you're basically just guiding the knife through the natural seams.
