Just discovered how carrot tops can boost flavor in stocks

I was cleaning up after prep and almost tossed out a bunch of carrot tops. Then I read about using them in vegetable stock. I tried simmering them with onion skins and celery ends. The stock came out with a really nice, earthy taste. It cuts down on food waste big time. Now I save all my root veg trimmings in a freezer bag. Give it a shot if you haven't already.

Is it just me or does it taste bitter?

Tastes pretty smooth to me, honestly. I'm getting more of a roasted flavor than any bitterness. Guess our taste buds are just wired differently.

Maybe it's the water you're using? Hard water can make coffee taste bitter.
