The Saturday I lost 3 covers but won the expo line
Last weekend in Portland I had a service where every ticket was 86'd and we still had 40 reservations, so I had to rewrite the whole menu on the fly and somehow pulled it off. My sous was out sick and the new prep kid burned the demi-glace, but the servers backed me up and the line ran clean through the rush. Has anyone else had a shift that should've been a disaster but turned out to be your best ever, and what made it click for you?
The phrase "the pressure makes everyone sharper" sounds nice but I am not sure it holds up in real life. Most of the time when things get messy at work, people just get tired and cranky and start blaming each other. A little pressure can help, sure, but too much usually makes things worse, not better. Maybe your team is just lucky or the chaos was not as bad as you are making it sound.
