Mudded a ceiling with wrong mix, had to scrape the whole thing

Last week I was finishing a garage ceiling in Tacoma and grabbed a bucket I thought was all-purpose. Turned out it was setting compound that had already kicked in the pail. By the time I got it on the taping tools it was lumpy and grabbed like glue. Had to scrape off about 300 square feet and start over with fresh hot mud. Has anyone else mixed up their compound buckets and lost a full day to it?

Wait, it had already kicked in the pail and you still tried to run it? That's like fighting a brick with a trowel, man.
