Just read that a standard 5-gallon fermenter can hold about 25 pounds of cabbage for kraut, which seems like a crazy amount to me.
I found that fact in a library book from 1998 called 'The Joy of Pickling' while looking for something else, and now I'm trying to picture my tiny kitchen counter holding that much veg.

Actually, that's for a 5-gallon crock, not a fermenter.
