Why does nobody talk about recipe testing eating into freelance cook profits?

Some freelancers swear by testing every recipe to nail it, but others skip it to save cash. It's a tough call when you're trying to make a living. What do you all think?

Last month, I tested a brisket recipe three times before submitting it. Each test cost about $50 in meat and spices. But getting it right meant the client loved it and hired me for two more projects. If I had skipped testing, the recipe might have failed, and I could have lost that client forever. The upfront cost is just part of doing business right. In my experience, reliable work leads to more word of mouth and steady income.
