Watched a local bakery use AI to double their morning prep speed in 3 months

I've been getting coffee at this place in St. Louis called Pie Hard for years, and last winter they were always scrambling with dough and toppings around 7am. Then the owner told me she started using this AI tool called ForecastFlow that looks at weather, local events, and even social media trends to predict daily demand. After 3 months of tweaking the data inputs, their morning prep went from guessing batches to having exactly 42 croissants ready by 6:30am last Tuesday. The biggest change was they stopped throwing away 12 trays of unsold pastries every week, which saved nearly $150 a month. It's wild how something as simple as bread can get optimized by machine learning without losing the handmade feel. Has anyone else seen small food spots quietly using AI like this?

42 croissants sounds more like a weird fetish than a workflow optimization.

Start with 15 and test it for a week. If it's not enough you can always bump it up, but 42 is just asking for wasted work.
