Appreciation post: the neighbor who taught me how to grill flank steak right

Last weekend I was out back trying to grill some flank steak and it came out like a hockey puck again. My neighbor Jose saw me from his deck and came over with a beer and a meat thermometer. He showed me how to score the meat and let it rest for 10 minutes before slicing. Total game changer, the texture was night and day different. Anyone else have a random neighbor drop knowledge like that out of nowhere?

Respectfully I gotta say I'm not on board with the meat thermometer thing. Look, I get that Jose was being helpful and all. But flank steak isn't supposed to be some science project. My grandma cooked it in a cast iron pan with just salt and pepper. No scoring, no resting, no fancy gadgets. She'd flip it once, take it off when the edges curled, and slice it thin against the grain. Came out perfect every time. People overthink simple cooking. Sometimes the old way is just better.

People get obsessed with perfecting every little thing these days instead of just trusting their hands and instincts. Cooking's not the only place that happens either.

That flank steak bit actually got me thinking, I was way too science heavy before.
