I tried two different ways to shape my sourdough loaves and one was a game changer

For months I was just doing a basic fold and tuck, but my loaves kept spreading out flat. Last week, I watched a video from a baker in Portland and tried the coil fold method instead. The difference was huge, my bread rose up instead of out and got that nice open crumb I wanted. Has anyone else found a specific shaping trick that made a big difference for them?

Ugh, I feel this so hard. I was stuck in the same flat loaf rut for ages, just doing the basic fold. My bread looked more like a pancake. Tbh, I tried the coil fold after seeing someone talk about it online too, and it was like magic. Suddenly my dough had some actual height and structure. It makes such a difference when you find that one little trick.
