TIL you're supposed to spoon flour into the cup, not scoop it out, and my banana bread finally worked
I've been baking banana bread for a while and it always came out dry and dense, but last week my neighbor Carol watched me scoop flour straight from the bag with the measuring cup and said that packs in way too much. I tried her way, spooning it in and leveling it off with a knife, and the loaf came out moist for the first time in probably 5 batches. Is this something everyone else already knew, or did you all learn it the hard way too?
My grandma caught me doing the scoop thing back in 2019 and she about lost it. She grabbed the bag out of my hands and showed me the spoon method right there in her kitchen. I had been baking for like 3 years at that point and nobody ever told me. The kicker is that it can add up to 20 percent more flour than you actually need, which is exactly why your bread was coming out like a brick. So nah, you're not alone, most of us learn it the hard way or from someone watching us mess up.
