I thought wrapping brisket in foil was a total cheat until last weekend

My buddy in Austin showed me his method with peach paper after 6 hours of smoke, and the bark stayed perfect. Anyone else switch from foil and notice a big difference?

Watched my own "perfect" foil-wrapped brisket turn into a sad, steamed pot roast last year, so I feel this. Switched to paper myself and it's like the difference between a soggy sandwich and actual barbecue. My grill now produces meat that holds its shape instead of just falling apart in a puddle. Still kind of mad about all the years I spent being a foil loyalist, to be honest.

Honestly "soggy sandwich" is the perfect way to describe foil brisket. I can't believe you stuck with foil for years, that's some serious dedication. My one try with it turned the bark into mush and I never went back.

That foil loyalty is a real trap, man. My uncle swore by it for ages, and @caleb_thomas85 is right about the soggy sandwich texture. He finally switched to paper and acted like he discovered fire.
