My buddy in Memphis swore by wrapping brisket in foil after 4 hours, I called him nuts

He said 'trust the Texas crutch, it keeps it moist' and I finally tried it on a 16-pounder last weekend. The flat came out way juicier than my usual no-wrap method. Anyone else switch from being a wrap hater to a believer?

My friend was a total no-wrap purist, mocked anyone who used foil. His brisket was always a bit dry though. He finally caved and tried the Texas crutch on a big cook for his kid's birthday. The thing came out so tender he wouldn't shut up about it for a week. He still grumbles about it being a cheat, but his smoker hasn't seen an unwrapped brisket since.

My uncle in Austin does the foil wrap every single time. I get the idea but honestly, it's just a piece of meat. If it's cooked right it's gonna be good either way. All that fuss over a cooking step seems like overkill to me. I've had great brisket wrapped and unwrapped. Just feels like people make it a bigger deal than it needs to be.

My cousin in Dallas is the same way, adamgreen. It's like the foil wrap debate is a whole personality for some folks. I see this everywhere now, people turning a simple choice into a full-on war over the "right" way to do things. It happens with coffee, phone brands, you name it. At the end of the day, good meat is good meat, and getting mad about how it got there just misses the point. We make easy things way too hard sometimes.
