My digital temp probe gave out mid-cook on a $200 brisket last Sunday

Smoking a 15lb packer for the family reunion and my ThermoPro just died at hour 8. Had to finish by feel, which I haven't done in years. Has anyone else had one of these fail on them without warning?

That phrase "nine hours in changed my mind" really hits home for me @nathanj56 because I think people forget how much we lean on our gear until it lets us down. But heres the angle nobody else touched on yet, that brisket might have actually turned out better than if the probe never died. Hear me out, when we rely on probes we tend to pull meat at a target temp without feeling for that buttery probe tender give. Those last few hours by touch forced you to actually check the flat and point separately, which is something most of us skip when we watch numbers. Having done both ways, I bet that packer was perfectly cooked because you had to use your hands instead of your eyes.

Used to swear by touch, but nine hours in changed my mind.

Don't you think maybe that brisket was already toast before the probe died, and you just blamed the tool instead of admitting the cook went sideways? Numbers dont lie, hands do.
