Update: That 'fast-setting' mortar mix cost me a whole afternoon and about $80 in wasted material.
I rushed a small garden wall repair because the bag said it was ready in 30 minutes, but it went off way too fast in the sun and I had to chip out and redo the whole top course... what's your go-to mix for quick, small fixes that won't turn on you?

Yeah, totally. Read an article where a baker tested it. Said the dough was supposed to be good for an hour, but it got tight and tough after like forty minutes. Had to rush the shaping. Makes you wonder if they test it in a perfect lab kitchen or a real one.
