Picked a flat top over a charbroiler for my new station
I just switched to a new kitchen in Portland and had to choose between a flat top and a charbroiler for my main cook station. I went with the flat top because I do a lot of breakfast and fried rice during brunch rush. First week was rough getting used to the heat zones, but after 10 days I can crank out 30 orders an hour without burning anything. Has anyone else made that swap and found it changed their whole cooking style?
