Got hit with the same thing on my place in March. What saved me was calling the servicer before the reset date and asking about their loan mod program, turns out they had one I didn't even know about. I had to send in a hardship letter and pay stubs, and they dropped my rate to 4.25 for two years. Not amazing but it kept me from losing the house, so it was worth the annoying paperwork.

Pressure canning and water bath canning are not the same thing, and stock is a low acid food so it actually needs the pressure canner to be safe to sit on a shelf. If you tried the same thing with a regular boiling water bath you would be risking some serious stuff. Sounds like you got the right gear though, so just make sure you are running it at the correct pressure for your altitude.
