I finally got my sour coffee to stop by changing one thing about my grinder.
After three mornings of bitter cups, I realized my cheap blade grinder was creating too many fine particles, so I switched to a manual burr grinder set to a coarse 12 clicks and the difference was immediate, so what's your go-to fix for astringent brew?

Wait, seriously? My friend had the same weird fix for her sour espresso. She was about to buy all new beans, but then she found this thick, white film of mineral gunk in her machine's reservoir. A good scrub with some vinegar and the coffee went back to tasting normal.

Oh man, @theajackson, that gunk is no joke. I had the exact same sour taste and it drove me nuts for a week. I was messing with grind size and water temp before I finally checked the group head. It was totally clogged with old coffee oil and scale. A proper cleaning with a machine detergent fixed it overnight. It's crazy how much a dirty machine can mess with the flavor.
