Saw a barista in Seattle toss a shot because it ran 2 seconds long, is that normal or overkill?
I was at a small cafe in Ballard last week and watched the guy pull a double shot, glance at the timer, and dump the whole thing in the sink. He said it clocked 29 seconds instead of 27 and that was that, no tasting, no nothing. Half of me thinks that is real craft and respect for the bean. The other half thinks he just threw away good coffee over a number on a screen. Where do you all draw the line on shot times?
Two seconds over and it goes down the drain? That sounds less like craft and more like a guy who watched too many YouTube videos about dialing in. I've had plenty of shots that ran a bit long or short and still tasted great, sometimes better than the "perfect" 27 second one. Unless he actually tasted it and it was bitter or sour, he's just pouring money and good beans into the sink for no reason. A timer is a guide, not a judge handing out sentences. Coffee is food, not a science fair project.
