Shoutout to the barista who told me the real roast date matters more than the bag design
I was at Blue Bottle in Portland last week and asked about their beans, and the guy casually mentioned that coffee peaks about 5-14 days after roasting. I always thought the fancy bag meant it was fresh, but he pulled out a marker and showed me the date stamped on the side. Has anyone else actually started checking roast dates instead of just grabbing whatever looks good on the shelf?

Agreed with @lewis.troy, that trick is slick. Took me way too long just to realize sharpies aren't for the whiteboard, haha.
