Was a cold brew skeptic until I tried a 24 hour steep from a shop in Austin

I always thought cold brew was just weak iced coffee, but that batch had this chocolatey smoothness that changed my mind. Has anyone else been converted by a specific method or shop, or am I still missing something?

Man, c'mon - "melted chocolate" is pushing it a bit, right? I've had some good cold brew too but let's not get carried away like it's some life changing spiritual experience. @grace_allen makes a good point, a 48 hour steep in the fridge sounds more plausible than turning water into liquid candy, so maybe that's the trick people are riding on.

Man, my buddy swore by this place in Portland that did a 48 hour steep and I thought he was nuts... then he brought me a cup and it was like drinking melted chocolate.

48 hours? No way. That's not just a steep, that's a whole science experiment. I've done 12, 14 hour steeps and thought that was pushing it. But 48? The water would have to be cold, right? Otherwise you'd just get a bitter, over-extracted mess. Unless they were doing it in the fridge or something. I'm skeptical, but that sounds too good to be a lie.
