I used to always crowd my deep fryer basket, thought it was saving time

For like 2 years I would just throw as much food in as possible, figured more surface area meant faster cooking. Then last month I dropped in a batch of hushpuppies and the oil temp dropped from 350 to 280 instantly. They came out greasy and raw in the middle, a total mess. My neighbor who runs a food truck saw it and laughed, told me you gotta fry in small batches or it's just a soggy disaster. Has anyone else stubbornly done this for way too long?

Dropping the basket slower like ray said actually worked for me too, helps keep the temp steady.

Manually dropping the basket slower helped my oil temp stay stable and food come out crisp.

Did you ever see that Serious Eats test where they compared drop speeds and it actually made a measurable difference in the final crunch? I tried it after watching their video and it totally checked out for me too.
