I keep hearing 'just paint over it' for old kitchen cabinets and I'm not convinced

At the hardware store last week, I overheard a guy telling his friend to just slap some paint on his 1970s oak cabinets instead of replacing them. He said it's a weekend job and costs maybe $200. I did that exact thing in my last house and it was a mess. The old finish bled through the paint after six months, the doors wouldn't close right because the paint built up, and I ended up spending way more to fix it. A proper refinish means stripping, sanding, priming with a stain blocker, and using a sprayer for a smooth coat. That's a two-week project, not a weekend. Why do people make it sound so easy when it can go so wrong so fast? Has anyone else had a paint job fail and had to start over from scratch?
