The week I tried plant-based cooking every day changed my mind about it being just a fad

I always thought vegan food was a short-lived trend for rich people. Then last June I did a 7-day challenge where I made every meal from beans, grains, and veggies. Day 3 I made a black bean chili that was actually better than the beef version. By day 6 I had more energy and saved $28 on my weekly food bill. Has anyone else had a similar experience with a diet you thought was just hype?

Well hold on, that $28 savings is a little misleading if you're not factoring in what you spent on spices and dried beans upfront. Most people don't have a fully stocked pantry starting out. It's a good experiment overall though, just gotta watch the hidden costs.

Oh yeah @lindaowens you're totally right about that... I did the same thing a few months back and ended up spending like $40 just on cumin and paprika alone. Easiest way around it is to hit up a bulk bin store or a local ethnic market, way cheaper than the little jars at the grocery store.
