Totally get that with the pickles. My great aunt was the same way, just throwing stuff in a jar. The brine tasting trick is solid advice, honestly. What clicked for me was realizing the cucumbers themselves matter most. If they're super fresh and firm, you can be way more relaxed with the salt and vinegar amounts. It's like the good produce forgives a lot of little mistakes. Did your grandma have a favorite kind of cucumber she always used?

Yeah that "never measured" thing is so real... once you do it enough you just know. My trick is to taste the brine before pouring it over. If it's saltier than seawater but you can still stand it, you're golden.
